Bring production closer to the plate and reduce unnecessary packaging and transport.

How it works
Every system begins with the restaurant—not a catalog. We design around your space, workflow, menu, and guest experience.
We learn about your restaurant, ingredient needs, available space, and operating priorities.
A tailored growing system is planned around your business and installed with the room in mind.
Your team gets a straightforward growing workflow and can harvest fresh ingredients as service demands.
Freshness in motion
Hydra puts better ingredients closer to the moment they matter. Reduce supplier dependency for select herbs, extend usable freshness, cut waste, and make sustainability visible in the room.
Inside the system

Built, not bought
Hydra is hands-on by design. We prototype, fabricate, test, and refine our growing systems ourselves so each installation can be shaped around the space it serves.

Our story
Long before Hydra, there were two kindergarteners named Levi Lopez and Tad Hruska.
What began as a childhood friendship grew through years of shared experiences. We eventually became Eagle Scouts together, learning to build, solve problems, lead, and see ambitious projects through from an idea to something real.
Years later, that same mindset became Hydra. We started the company around a simple idea: bring the source of fresh ingredients closer to the kitchens that care about them most.

A better seat at the table
When guests can see what’s growing, freshness becomes part of the story. Herbs harvested close to service can become part of the experience—not just an ingredient in the back of house.
Questions, answered
Hydra systems are best suited to culinary herbs, leafy greens, microgreens, and select specialty produce. The exact crop plan should be matched to your menu, available light, system size, and operating goals.
Day-to-day care can be kept simple, but every live growing system still requires routine monitoring, cleaning, nutrient management, and crop care. Hydra can design the workflow around your team and provide operating guidance.
Yes. The system can be developed around available space, workflow, visual goals, and ingredient needs. A site consultation is the best way to determine what is practical.
Usually not. The goal is to supplement your supply chain with selected ingredients that benefit most from being harvested fresh and close to service.
